Delicious zucchini fritters that are high in protein, low in carbs, and cooked in an air fryer, making them crispy and healthy.
Ingredients
- 2 medium zucchinis, grated
- 1 cup almond flour (or any low-carb flour)
- 2 large eggs
- 1/2 cup feta cheese or cottage cheese, crumbled
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray or olive oil for frying
Instructions
- Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean cloth and squeeze out the excess moisture.
- Mix the ingredients in a mixing bowl, combining the grated zucchini, almond flour, eggs, feta cheese, green onions, garlic powder, salt, and pepper until well incorporated.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Form the mixture into small patties, about 2 inches in diameter, and place them on a plate.
- Cook the fritters in the air fryer, lightly spraying the basket with cooking spray. Arrange fritters in a single layer, spray the tops lightly, and cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Notes
Choose firm zucchinis for better results and consider adding herbs or chopped jalapeños for extra flavor.
