Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup granulated sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 cup pure pumpkin puree
- 1 teaspoon vanilla extract
- Optional: ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
- Combine Wet Ingredients: In another bowl, beat together the sugar and vegetable oil until it’s well blended. Add in the eggs, pumpkin puree, and vanilla extract, whisking until smooth.
- Combine Mixtures: Gradually incorporate the dry mixture into the wet mixture, stirring gently until just combined. Be careful not to overmix! If you’re adding walnuts or chocolate chips, fold them in now.
- Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tins, filling each cup about 2/3 full.
- Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Once baked, let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

For best results, use room temperature ingredients and avoid overmixing the batter.
