Ingredients
- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper
- ½ cup all-purpose flour (or gluten-free blend)
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 cup chicken broth
- ½ cup fresh lemon juice (about 2 lemons)
- ¼ cup capers, rinsed and drained
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the chicken by seasoning both sides with salt and pepper. Dredge in flour, shaking off excess.
- Sear the chicken in a skillet with olive oil for 3–4 minutes on each side until golden and cooked through.
- Make the sauce by adding butter to the skillet, then chicken broth and lemon juice, scraping browned bits from the pan. Add capers and simmer for 5 minutes.
- Return the chicken to the skillet, spoon sauce over it, and simmer for a few more minutes to meld flavors.
- Garnish with fresh parsley before serving, and enjoy with pasta or salad.
Notes
For a gluten-free option, use a gluten-free flour blend. Fresh lemon juice is essential for the best flavor.
