Ingredients
- 2 cups all-purpose flour
- 2 large eggs
- 1/4 cup water
- 1 lb ground beef or lamb, optional
- 1 small onion, finely chopped
- 2 cups plain whole milk yogurt
- 3-4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1-2 teaspoons paprika or Aleppo pepper
- 1 teaspoon dried mint, optional garnish
- Salt, to taste
Instructions
- Mix the flour, eggs, and water to form a firm pasta dough. Knead until smooth, roll thinly, and cut into small, uniform pieces. Alternatively, prepare your chosen store-bought small pasta.
- Bring a large pot of salted water to a boil.
- Add the fresh or dry pasta and cook until tender but still firm and al dente.
- Drain the pasta well, reserving a small amount of the pasta cooking water.
- Combine the plain whole milk yogurt with the minced garlic in a bowl and season with a pinch of salt.
- Add 1-2 tablespoons of reserved pasta water to the yogurt sauce if needed, stirring until smooth and creamy.
- Melt the unsalted butter in a small pan over medium heat.
- Stir in the paprika or Aleppo pepper and cook for about 30 seconds until fragrant, taking care not to burn the spices.
- Divide the warm cooked pasta among serving bowls.
- Spoon a generous amount of garlic yogurt sauce over the pasta.
- Drizzle the warm spiced butter mixture over the yogurt.
- Garnish with dried mint, if desired, and serve immediately.
