- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 1 clove garlic, minced

- Freshly ground black pepper, to taste
Instructions
- If using dried lentils, rinse them thoroughly and place them in a pot with 3 cups of water.
- Bring the lentils to a boil, reduce the heat, and simmer for 20-25 minutes until tender but not mushy.
- Drain any excess liquid and allow the lentils to cool slightly.
- Finely dice the cucumber, mince the red onion and garlic, and chop the fresh herbs.
- In a medium bowl, combine the cooked lentils, diced cucumber, minced red onion, chopped herbs, and garlic.
- Add the crumbled feta cheese, if using.
- Pour in the fresh lemon juice and extra virgin olive oil.
- Gently stir everything together until evenly combined.
- Season with salt and freshly ground black pepper to taste.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with pita bread, crackers, fresh vegetable sticks, or your favorite dippers.
Notes
Use fresh, firm cucumber and vibrant herbs for the best flavor and texture. Pre-cooked lentils make this dip especially quick to prepare. For extra flavor, add smoked paprika, red pepper flakes, tahini, sun-dried tomatoes, dill, or parsley. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Freezing is not recommended because it can affect the texture of the vegetables and lentils.
