Description

A vibrant and flavorful Trader Joe’s Hippy Dip made with hearty lentils, fresh cucumber, herbs, lemon, and olive oil. This refreshing Mediterranean-inspired dip is perfect for pita chips, fresh vegetables, sandwiches, wraps, or salads.


Ingredients

  • 1 cup dried green lentils, or 2 cups pre-cooked lentils
  • 1 large English cucumber, finely diced
  • 1/4 cup fresh mint or parsley, chopped
  • 1/4 cup red onion, finely minced
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. If using dried lentils, rinse them thoroughly and place them in a pot with 3 cups of water.
  2. Bring the lentils to a boil, reduce the heat, and simmer for 20-25 minutes until tender but not mushy.
  3. Drain any excess liquid and allow the lentils to cool slightly.
  4. Finely dice the cucumber, mince the red onion and garlic, and chop the fresh herbs.
  5. In a medium bowl, combine the cooked lentils, diced cucumber, minced red onion, chopped herbs, and garlic.
  6. Add the crumbled feta cheese, if using.
  7. Pour in the fresh lemon juice and extra virgin olive oil.
  8. Gently stir everything together until evenly combined.
  9. Season with salt and freshly ground black pepper to taste.
  10. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  11. Serve chilled with pita bread, crackers, fresh vegetable sticks, or your favorite dippers.

Notes

Use fresh, firm cucumber and vibrant herbs for the best flavor and texture. Pre-cooked lentils make this dip especially quick to prepare. For extra flavor, add smoked paprika, red pepper flakes, tahini, sun-dried tomatoes, dill, or parsley. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Freezing is not recommended because it can affect the texture of the vegetables and lentils.
