Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup sliced mushrooms
- 1 cup shredded cheddar cheese
- 1 cup cream of chicken soup
- 1/2 cup chicken broth
- 4-6 slices of crispy bacon, crumbled
- Fresh parsley for garnish (optional)
Instructions
- Prep the Chicken: Preheat your oven to 375°F (190°C). Season the chicken breasts generously with salt and pepper on both sides.
- Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- Sauté the Mushrooms: In the same skillet, add the sliced mushrooms. Sauté them for about 3-4 minutes until they begin to soften.
- Prepare the Sauce: In a bowl, mix the cream of chicken soup and chicken broth until well combined. Pour the mixture over the mushrooms in the skillet, stirring to incorporate.
- Add Chicken Back: Return the chicken breasts to the skillet, spooning some of the sauce over the top.
- Cheese It Up: Sprinkle the shredded cheddar cheese over the chicken breasts.
- Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
- Finish with Bacon: Once out of the oven, sprinkle the crumbled bacon over the cheesy chicken. Garnish with fresh parsley if desired.
- Serve: Serve warm with your favorite sides for a complete meal!
