Description

A comforting and satisfying dish featuring tender chicken, a sweet and savory teriyaki glaze, and fresh vegetables served over jasmine rice.


Ingredients

  • 2 cups of cooked jasmine rice
  • 1 pound of chicken breast, sliced thinly
  • 1 tablespoon of olive oil
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 1 cup of broccoli florets
  • ½ cup of soy sauce
  • ¼ cup of brown sugar
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of sesame oil
  • 1 teaspoon of minced garlic
  • 1 teaspoon of minced ginger
  • Sesame seeds and green onions for garnish


Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Set aside.
  2. Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the sliced chicken breast and cook until it’s browned and no longer pink, about 5-7 minutes.
  3. Add vegetables: Once the chicken is cooked, add the carrot, bell pepper, and broccoli to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.
  4. Combine with sauce: Pour the teriyaki sauce over the chicken and vegetables, stirring to coat everything evenly. Let it simmer for about 2-3 minutes until the sauce thickens.
  5. Serve: In a bowl, place a generous serving of jasmine rice, top it with the chicken and vegetable mixture, and garnish with sesame seeds and chopped green onions.

Notes

For meal prep, store individual servings in the fridge. You can substitute soy sauce with tamari for a gluten-free option.
