Ingredients

  • 4 medium-sized sweet potatoes
  • 1 pound ground turkey or beef
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (like cheddar or Monterey Jack)
  • Fresh cilantro, for garnish
  • Optional toppings: sour cream, avocado, jalapeños


Instructions

  1. Bake the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork, then bake directly on the oven rack for 45-60 minutes until soft.
  2. Prepare the Taco Filling: In a skillet over medium heat, cook the ground turkey or beef until browned. Drain excess fat if needed. Add the taco seasoning, black beans, corn, and diced tomatoes. Stir well to combine and cook for an additional 5-7 minutes.
  3. Assemble the Sweet Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each sweet potato and gently fluff the insides with a fork.
