Description

A cozy fall delight featuring sweet potatoes filled with savory ground turkey and black beans, perfect for a nutritious meal.


Ingredients

  • 2 medium-sized sweet potatoes
  • 1 pound ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: shredded cheese, sour cream, green onions, or avocado


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce their skin several times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes or until tender.
  4. Heat a tablespoon of olive oil in a large skillet over medium heat.
  5. Add the diced onion and sauté until translucent, about 4 minutes.
  6. Stir in minced garlic, cumin, and chili powder; continue cooking for another minute.
  7. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Season with salt and pepper.
  8. Once the turkey is cooked, add the black beans and corn, stirring to combine everything well.
  9. Once the sweet potatoes are baked and cool enough to handle, carefully slice them in half lengthwise.
  10. Gently scoop out some of the flesh from each potato half to create a “boat.”
  11. Fill each sweet potato half with the savory turkey and black bean mixture.
  12. Place the filled sweet potato halves back on the baking sheet and return to the oven for an additional 10-15 minutes to heat through.
  13. Remove from the oven and add your desired toppings. Serve warm and enjoy!

Notes

Choose firm sweet potatoes for the best texture. You can microwave sweet potatoes for a quicker cooking option.
