A cozy fall delight featuring sweet potatoes filled with savory ground turkey and black beans, perfect for a nutritious meal.
Ingredients
- 2 medium-sized sweet potatoes
- 1 pound ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for cooking
- Optional toppings: shredded cheese, sour cream, green onions, or avocado
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and pierce their skin several times with a fork.
- Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes or until tender.
- Heat a tablespoon of olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until translucent, about 4 minutes.
- Stir in minced garlic, cumin, and chili powder; continue cooking for another minute.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Season with salt and pepper.
- Once the turkey is cooked, add the black beans and corn, stirring to combine everything well.
- Once the sweet potatoes are baked and cool enough to handle, carefully slice them in half lengthwise.
- Gently scoop out some of the flesh from each potato half to create a “boat.”
- Fill each sweet potato half with the savory turkey and black bean mixture.
- Place the filled sweet potato halves back on the baking sheet and return to the oven for an additional 10-15 minutes to heat through.
- Remove from the oven and add your desired toppings. Serve warm and enjoy!
Notes
Choose firm sweet potatoes for the best texture. You can microwave sweet potatoes for a quicker cooking option.
