Description

A vibrant and nourishing beef stir fry loaded with colorful vegetables, perfect for clean eating meal prep.


Ingredients

  • 1 pound of lean beef (such as sirloin or flank steak), sliced thinly
  • 2 tablespoons of olive oil or coconut oil
  • 2 cups of mixed vegetables (bell peppers, broccoli, and snow peas)
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 1/4 cup of low-sodium soy sauce or tamari for gluten-free
  • 1 tablespoon of honey or maple syrup
  • Optional: sesame seeds and green onions for garnish


Instructions

  1. In a large skillet or wok, heat the olive oil over medium-high heat.
  2. Add the sliced beef and stir-fry for about 3-4 minutes, until browned and cooked through. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the minced garlic and grated ginger, stirring until fragrant (about 30 seconds).
  4. Add the mixed vegetables and stir-fry for 5-7 minutes, or until crisp-tender.
  5. Return the cooked beef to the skillet, and stir in the soy sauce and honey. Cook for an additional 2 minutes, until everything is heated through and well-coated.
  6. Remove from heat, sprinkle with sesame seeds and sliced green onions if desired, and serve.

Notes

Slice the beef against the grain for maximum tenderness. Prep all ingredients beforehand as stir fries are quick to cook.
