Description

A comforting pasta dish with garlic butter, tender chicken, and a smoky flavor, perfect for autumn.


Ingredients

  • 400g pasta (your choice: penne, fettuccine, or spaghetti)
  • 500g chicken breast, diced
  • 4 tablespoons unsalted butter
  • 5-6 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese, for serving


Instructions

  1. Begin by bringing a large pot of salted water to a boil.
  2. Add the pasta and cook until al dente, according to package instructions.
  3. Reserve a cup of pasta water, then drain the pasta and set it aside.
  4. In a large skillet, melt the butter over medium heat.
  5. Once melted, add the minced garlic and sauté until fragrant—about 1 minute.
  6. Add the diced chicken to the skillet and season with smoked paprika, salt, and pepper. Sauté until the chicken is browned and cooked through—about 6-8 minutes.
  7. Add the cooked pasta into the skillet with the chicken.
  8. Toss everything together, adding reserved pasta water a little at a time until you’ve reached your desired sauce consistency.
  9. Adjust seasonings as necessary and cook for an additional 2 minutes.
  10. Garnish with fresh parsley and serve warm, adding grated Parmesan cheese on top if desired.

Notes

Save some pasta water to adjust the sauce consistency. Cut chicken into uniform pieces for even cooking.
