Ingredients
- 1 pound chicken thighs, boneless and skinless
- 1/2 cup honey
- 3 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch (optional for thickening)
- Green onions for garnish
- Sesame seeds for garnish (optional)
Instructions
- Prep the chicken: Begin by trimming any excess fat from the chicken thighs and cutting them into bite-sized pieces.
- Make the marinade: In a bowl, combine honey, gochujang, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil. Whisk together until well blended.
- Marinate the chicken: Add the chicken pieces to the bowl, ensuring they are well coated with the marinade. Let the chicken marinate for at least 30 minutes. For even better flavor, marinate the chicken in the fridge for up to 4 hours.
- Cook the chicken: In a large skillet over medium-high heat, add the marinated chicken (reserve the marinade) and cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown.
- Thicken the sauce: Pour the reserved marinade into the skillet, and bring it to a simmer. If desired, mix cornstarch with a tablespoon of water to create a slurry and add it to the sauce for a thicker texture. Stir frequently until the sauce thickens, about 2-3 minutes.
- Garnish and serve: Once the chicken is coated in the sticky glaze, remove it from heat. Scoop the chicken onto a plate and sprinkle with green onions and sesame seeds. Serve over steamed rice or noodles for a fulfilling meal.
Notes
For better flavor, marinate the chicken longer, and adjust the gochujang for desired spice level.
