Description

A warm, comforting meal featuring tender chicken stuffed with a vibrant blend of spinach and creamy cheeses.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gently place each chicken breast between two sheets of plastic wrap. Using a meat mallet, pound the chicken to about 1/2 inch thickness.
  3. In a medium bowl, mix the spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, Italian seasoning, salt, and pepper until well combined.
  4. On each chicken breast, spoon a generous amount of the spinach mixture in the center. Carefully roll and secure with toothpicks or kitchen twine.
  5. In a skillet, heat olive oil over medium-high heat. Add the stuffed chicken rolls and sear until golden brown, about 3-4 minutes per side.
  6. Transfer the seared chicken to a baking dish and bake for 20-25 minutes or until fully cooked.
  7. Once cooked, let the chicken rest for a few minutes before slicing.

Notes

Use fresh ingredients for the best flavor. Don’t overcook the chicken to prevent it from becoming dry.
