Description

A healthy low-carb dinner option featuring chicken breasts stuffed with a delicious spinach and cheese mixture.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach (or 1/2 cup frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup shredded mozzarella cheese (optional, for topping)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the spinach, ricotta cheese, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper in a mixing bowl until well-blended.
  3. Cut a pocket into each chicken breast with a sharp knife, careful not to cut all the way through.
  4. Stuff each chicken breast generously with the spinach mixture. Secure openings with toothpicks if needed.
  5. Rub the chicken breasts with olive oil and season with additional salt and pepper on both sides.
  6. Bake for 25-30 minutes, or until cooked through and chicken reaches an internal temperature of 165°F (75°C). If using, sprinkle mozzarella cheese on top during the last 5 minutes of baking.
  7. Rest the chicken for a few minutes before slicing. Serve hot with a side of steamed vegetables or a fresh salad.

Notes

Thaw frozen spinach thoroughly if used. Use a meat thermometer to ensure chicken doneness.
