Description

A cozy and hearty casserole that combines shredded chicken, black beans, corn, and a delightful blend of spices.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh or canned)
  • 1 cup diced tomatoes with green chilies
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, cumin, chili powder, salt, and pepper in a large mixing bowl. Mix well.
  3. Transfer the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  4. Sprinkle the shredded cheddar cheese generously on top of the casserole.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Garnish with fresh cilantro before serving.

Notes
