Ingredients
- 4 chicken thighs (bone-in, skin-on preferred for flavor)
- Salt and pepper to taste
- 1 cup of chicken broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of sour cream
- 1 tablespoon of olive oil
- Fresh herbs (like thyme or parsley) for garnish
Instructions
- Prepare the chicken: Season the chicken thighs with salt and pepper. In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken thighs skin-side down. Cook for about 5-7 minutes until the skin is crispy and golden brown. Flip the thighs and cook for another 5 minutes. Remove and set aside.
- Sauté vegetables: In the same skillet, add the diced onions and sauté until translucent, approximately 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.
- Create the sauce: Pour in the chicken broth and bring to a simmer. Scrape the bottom of the pan to sauté any bits stuck to the skillet, enhancing the flavor.
- Combine ingredients: Return the chicken to the skillet, then reduce the heat to low. Mix in the sour cream until fully incorporated. Cover the skillet and let it simmer for about 20 minutes or until the chicken is cooked through.
- Serve: Ensure to serve this dish with a side of rice or bread to soak up the rich sauce or even on top of mashed potatoes for a comforting meal.
Notes
For a lighter version, substitute sour cream with Greek yogurt. This dish can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
