A hearty and comforting Slow Cooker Cowboy Casserole filled with ground beef, beans, corn, and spices, perfect for cozy nights.
Ingredients
- 1 pound ground beef
- 1 can black beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1 can diced tomatoes (with green chilies)
- 1 cup corn (frozen or canned)
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 onion, diced
- 1 bell pepper, diced
- Optional toppings: sour cream, jalapeños, or avocado
Instructions
- Brown the ground beef in a large skillet over medium heat until fully cooked. Drain off any excess fat.
- Combine the browned beef, black beans, pinto beans, diced tomatoes, corn, onion, bell pepper, and taco seasoning in your slow cooker. Stir well to mix.
- Cook on low for 6-8 hours, or on high for 3-4 hours to allow flavors to meld.
- Add the cheese about 15 minutes before serving and cover until melted.
- Serve the casserole in bowls topped with your favorite garnishes.
Notes
For the best flavor, use lean ground beef. Use gluten-free taco seasoning if needed.
