Description

A hearty and comforting Slow Cooker Cowboy Casserole filled with ground beef, beans, corn, and spices, perfect for cozy nights.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 1 can diced tomatoes (with green chilies)
  • 1 cup corn (frozen or canned)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 onion, diced
  • 1 bell pepper, diced
  • Optional toppings: sour cream, jalapeños, or avocado


Instructions

  1. Brown the ground beef in a large skillet over medium heat until fully cooked. Drain off any excess fat.
  2. Combine the browned beef, black beans, pinto beans, diced tomatoes, corn, onion, bell pepper, and taco seasoning in your slow cooker. Stir well to mix.
  3. Cook on low for 6-8 hours, or on high for 3-4 hours to allow flavors to meld.
  4. Add the cheese about 15 minutes before serving and cover until melted.
  5. Serve the casserole in bowls topped with your favorite garnishes.

Notes

For the best flavor, use lean ground beef. Use gluten-free taco seasoning if needed.
