Ingredients
- 2 boneless, skinless Chicken Breasts
- 4 cups Mixed Greens (such as spinach or arugula)
- 1 cup Cabbage (shredded)
- 2 Carrots (julienned)
- 1 Cucumber (sliced)
- 2 tablespoons Sesame Seeds (toasted)
- 3 tablespoons Soy Sauce
- 2 tablespoons Sesame Oil
- 1 tablespoon Honey (or maple syrup for vegan option)
- 2 tablespoons Rice Vinegar
- 2 cloves Garlic (minced)
- 1 teaspoon Ginger (minced)
- Salt and Pepper (to taste)
Instructions
- Cook the chicken: Season the chicken breasts with salt and pepper. In a skillet, heat a splash of olive oil over medium heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest before slicing into bite-sized pieces.
- Prepare the vegetables: While the chicken is cooking, wash and chop the mixed greens, cabbage, carrots, and cucumber.
- Make the dressing: In a small bowl, whisk together the soy sauce, sesame oil, honey, rice vinegar, garlic, and ginger until well combined.
