Ingredients

  • 1 pound (450g) boneless, skinless chicken breast, sliced thinly
  • 3 cloves of garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 8 ounces (225g) lo mein noodles (or egg noodles)
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 cup shredded carrots
  • 2 green onions, chopped
  • 2 tablespoons oyster sauce (or mushroom sauce for vegetarian)
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish


Instructions

  1. Marinate the chicken: In a bowl, combine the sliced chicken, minced garlic, soy sauce, sesame oil, and cornstarch. Let it marinate for about 15 minutes while you prepare the other ingredients.
  2. Cook the noodles: Cook the lo mein noodles according to the package instructions. Once cooked, drain and set aside, tossing them with a little oil to prevent sticking.
