Ingredients
- 1 pound (450g) boneless, skinless chicken breast, sliced thinly
- 3 cloves of garlic, minced
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 8 ounces (225g) lo mein noodles (or egg noodles)
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 cup shredded carrots
- 2 green onions, chopped
- 2 tablespoons oyster sauce (or mushroom sauce for vegetarian)
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Marinate the chicken: In a bowl, combine the sliced chicken, minced garlic, soy sauce, sesame oil, and cornstarch. Let it marinate for about 15 minutes while you prepare the other ingredients.
- Cook the noodles: Cook the lo mein noodles according to the package instructions. Once cooked, drain and set aside, tossing them with a little oil to prevent sticking.
- Stir-fry the chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Stir-fry the vegetables: In the same skillet, add another tablespoon of vegetable oil. Toss in the red bell pepper, broccoli, snap peas, and carrots. Stir-fry for about 4-5 minutes, or until the vegetables are bright and tender-crisp.
- Combine everything: Return the chicken to the skillet with the vegetables. Add in the cooked noodles and oyster sauce. Toss everything together over low heat, ensuring everything is well-coated and heated through. Season with salt and pepper to taste.
