Ingredients

- 2 tablespoons olive oil or melted halal butter

- 1 lemon, halved
- Fresh herbs (such as rosemary, thyme, or parsley)
- 4-5 cloves garlic, unpeeled
- 1 onion, quartered
- Seasonal vegetables (like carrots, potatoes, and Brussels sprouts), optional
Instructions
- Preheat the Oven: Start by preheating your oven to 425ยฐF (220ยฐC).
- Prepare the Chicken: Remove the chicken from its packaging and pat it dry with paper towels.
- Seasoning: Rub the olive oil or melted halal butter all over the chicken. Sprinkle generously with salt and pepper, both inside and out.
- Stuff the Chicken: Place the halved lemon, garlic cloves, and fresh herbs inside the cavity of the chicken.
- Add Aromatics: In a roasting pan, scatter the quartered onion and your choice of seasonal vegetables around the chicken.
- Roast: Place the roasting pan in the preheated oven. Roast for about 75 minutes, or until the internal temperature of the chicken reaches 165ยฐF (74ยฐC).
- Rest: Once done, take the chicken out of the oven and let it rest for about 15-20 minutes.
- Serve: Carve the chicken and serve with the roasted vegetables.
