Ingredients

  • 2 tablespoons olive oil or melted halal butter
  • Salt and pepper, to taste
  • 1 lemon, halved
  • Fresh herbs (such as rosemary, thyme, or parsley)
  • 4-5 cloves garlic, unpeeled
  • 1 onion, quartered
  • Seasonal vegetables (like carrots, potatoes, and Brussels sprouts), optional


Instructions

  1. Preheat the Oven: Start by preheating your oven to 425ยฐF (220ยฐC).
  2. Prepare the Chicken: Remove the chicken from its packaging and pat it dry with paper towels.
  3. Seasoning: Rub the olive oil or melted halal butter all over the chicken. Sprinkle generously with salt and pepper, both inside and out.
  4. Stuff the Chicken: Place the halved lemon, garlic cloves, and fresh herbs inside the cavity of the chicken.
  5. Add Aromatics: In a roasting pan, scatter the quartered onion and your choice of seasonal vegetables around the chicken.
  6. Roast: Place the roasting pan in the preheated oven. Roast for about 75 minutes, or until the internal temperature of the chicken reaches 165ยฐF (74ยฐC).
