Ingredients
- 4 boneless, skinless chicken thighs (or breasts)
- 1 cup long-grain rice
- 1 cup pineapple chunks (fresh or canned)
- 1 cup chicken broth
- 1 cup diced bell peppers (any color)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Prepare the chicken: Season the chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes on each side or until golden brown. Remove the chicken and set it aside.
- Sauté vegetables: In the same skillet, add diced onions, bell peppers, and minced garlic. Sauté for 3-4 minutes until the onions become translucent and fragrant.
- Add rice: Stir in the rice and ginger, letting it toast slightly for about 1 minute.
- Combine ingredients: Add the pineapple chunks, chicken broth, soy sauce, and the cooked chicken back into the skillet. Bring the mixture to a gentle boil.
- Cook until done: Reduce the heat to low, cover the skillet, and simmer for about 20 minutes or until the rice is tender and has absorbed the broth.
