Ingredients
- 12 ounces of fettuccine pasta
- 4 cloves of garlic, minced
- 3 cups of vegetable broth
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté the garlic: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, careful not to burn it.
- Cook the pasta: Add the fettuccine pasta and vegetable broth to the pot. Stir well, bring to a boil, then reduce heat and cover to simmer for about 10-12 minutes, or until the pasta is al dente.
- Add cream and cheese: Stir in the heavy cream and grated Parmesan cheese. Season with salt and pepper, cooking on low heat until the cheese has melted and the sauce is creamy.
- Garnish and serve: Remove from heat, garnish with fresh parsley, and consider pairing with a side of creamy garlic potato noodles.
