A cozy fall favorite with tender chicken simmering in a rich balsamic glaze.
Ingredients
- 4 boneless, skinless chicken breasts (halal)
- 1/2 cup balsamic vinegar
- 1/4 cup honey or maple syrup
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh thyme or rosemary for garnish
- 1 cup cherry tomatoes, halved (optional)
- 1 cup spinach leaves (optional)
Instructions
- Prep the ingredients: Pat the chicken breasts dry with a paper towel and season with salt and pepper.
- Make the balsamic sauce: Whisk together balsamic vinegar, honey (or maple syrup), minced garlic, and Dijon mustard in a bowl.
- Sear the chicken: Heat olive oil in a large skillet over medium-high heat and sear chicken for 5-7 minutes on each side.
- Add the sauce: Pour the balsamic mixture over the chicken, adding halved cherry tomatoes and spinach if desired.
- Simmer and cook: Reduce heat, cover, and simmer for 8-10 minutes until chicken is cooked through.
- Garnish and serve: Remove from heat and garnish with fresh thyme or rosemary, drizzling extra balsamic sauce over the chicken.
Notes
Use a meat thermometer for best results. Don’t overcrowd the pan to avoid steaming.
