Description

A cozy fall favorite with tender chicken simmering in a rich balsamic glaze.


Ingredients

  • 4 boneless, skinless chicken breasts (halal)
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey or maple syrup
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh thyme or rosemary for garnish
  • 1 cup cherry tomatoes, halved (optional)
  • 1 cup spinach leaves (optional)


Instructions

  1. Prep the ingredients: Pat the chicken breasts dry with a paper towel and season with salt and pepper.
  2. Make the balsamic sauce: Whisk together balsamic vinegar, honey (or maple syrup), minced garlic, and Dijon mustard in a bowl.
  3. Sear the chicken: Heat olive oil in a large skillet over medium-high heat and sear chicken for 5-7 minutes on each side.
  4. Add the sauce: Pour the balsamic mixture over the chicken, adding halved cherry tomatoes and spinach if desired.
  5. Simmer and cook: Reduce heat, cover, and simmer for 8-10 minutes until chicken is cooked through.
  6. Garnish and serve: Remove from heat and garnish with fresh thyme or rosemary, drizzling extra balsamic sauce over the chicken.

Notes

Use a meat thermometer for best results. Don’t overcrowd the pan to avoid steaming.
