A comforting and easy one-pan dish that combines savory chicken, sticky BBQ sauce, and fluffy rice, perfect for busy weeknights.
Ingredients
- 1 pound of boneless, skinless chicken thighs
- 1 cup of rice (jasmine or basmati recommended)
- 2 cups of chicken broth
- 1/2 cup of honey BBQ sauce
- 1 tablespoon of olive oil
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Season the chicken thighs with salt and pepper. In a large skillet over medium heat, add olive oil and sear the chicken on both sides until golden brown, approximately 4-5 minutes per side. Once cooked, remove the chicken from the pan and set it aside.
- Add the diced onion and bell pepper to the same pan and sauté until softened, about 3-4 minutes. Then, stir in the minced garlic and cook for another minute until fragrant.
- Pour the rice into the pan, stirring to combine with the sautéed vegetables. Next, add the chicken broth and bring the mixture to a gentle simmer.
- Return the seared chicken thighs to the pan, ensuring they are nestled into the rice mixture. Drizzle the honey BBQ sauce over the top.
- Cover the pan with a lid and reduce the heat to low. Allow it to cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove the lid and let it sit for a few minutes. Fluff the rice with a fork, garnish with fresh parsley if desired, and serve warm.
Notes
You can substitute chicken thighs with breasts if preferred. For added flavor, stir in smoked paprika or cayenne pepper when sautéing vegetables.
