Ingredients
- 1 pound ground chuck (80/20 lean)
- 12 ounces Andouille sausage, sliced
- 1 cup celery, finely chopped
- 2 cloves garlic, minced
- 14.5 ounces diced tomatoes, undrained
- 6 ounces tomato paste
- 4 cups chicken broth
- 2 tablespoons Cajun seasoning
- 12 ounces spaghetti, uncooked and broken in half
- Fresh parsley or chives, chopped, for garnish
Instructions
- Brown the ground chuck in a large deep skillet or Dutch oven, then drain excess fat.
- Add the sliced Andouille sausage and cook for several minutes until lightly browned.
- Stir in the chopped celery and minced garlic, cooking until softened, about 5 minutes.
- Add the diced tomatoes, tomato paste, chicken broth, and Cajun seasoning. Stir well and bring to a gentle boil.
- Add the spaghetti, ensuring it is submerged in the liquid. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally.
- Once the pasta is tender and the liquid has mostly absorbed, remove the lid and stir well.
- Garnish with fresh parsley or chives and serve immediately.
Notes
Use a large deep skillet to prevent overflow and stir the pasta occasionally to keep it from sticking. Add a splash of broth if needed while simmering and adjust the Cajun seasoning to your preferred spice level.
