Ingredients

  • 1 pound ground chuck (80/20 lean)
  • 12 ounces Andouille sausage, sliced
  • 1 cup celery, finely chopped
  • 2 cloves garlic, minced
  • 14.5 ounces diced tomatoes, undrained
  • 6 ounces tomato paste
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 12 ounces spaghetti, uncooked and broken in half
  • Fresh parsley or chives, chopped, for garnish


Instructions

  1. Brown the ground chuck in a large deep skillet or Dutch oven, then drain excess fat.
  2. Add the sliced Andouille sausage and cook for several minutes until lightly browned.
  3. Stir in the chopped celery and minced garlic, cooking until softened, about 5 minutes.
  4. Add the diced tomatoes, tomato paste, chicken broth, and Cajun seasoning. Stir well and bring to a gentle boil.
  5. Add the spaghetti, ensuring it is submerged in the liquid. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally.
  6. Once the pasta is tender and the liquid has mostly absorbed, remove the lid and stir well.

Notes
