Description
This One-Pan Caramelized Onion Pasta is a rich and comforting meal made with deeply caramelized onions, garlic, sun-dried tomatoes, spaghetti, Parmesan cheese, and fresh thyme. Everything cooks in one pan for maximum flavor and easy cleanup.
Ingredients
- 2 tbsp olive oil
- 3 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 12 oz spaghetti, broken in half
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh lemon juice
- 1/2 cup grated Parmesan cheese, plus extra for serving
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Heat the olive oil in a large deep skillet over medium-low heat.
- Add the sliced onions and cook for 20-25 minutes, stirring occasionally, until deeply caramelized.
- Stir in the minced garlic and chopped sun-dried tomatoes and cook for 2 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Add the broken spaghetti and fresh thyme, making sure the pasta is mostly submerged.
- Cover and cook for 10-12 minutes, stirring occasionally, until the spaghetti is al dente.
- Remove the pan from the heat and stir in the lemon juice and grated Parmesan cheese.
- Season with salt and black pepper to taste.
- Garnish with additional Parmesan cheese and fresh thyme if desired.
- Serve immediately while hot.
Notes
Cook the onions slowly for the best caramelized flavor. Stir the pasta occasionally while simmering to prevent sticking, and add a splash of broth if the pasta absorbs the liquid too quickly.
