Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup rice (preferably jasmine or basmati)
  • 1 cup chicken broth
  • ½ cup honey BBQ sauce
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional garnishes: sliced green onions, sesame seeds


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Sear the chicken for about 5-7 minutes on each side until browned and cooked through.
  2. Once the chicken is cooked, remove it from the skillet and set it aside. In the same skillet, add the rice, stirring to coat it in the oil and the flavorful bits from the chicken.
  3. Pour in the chicken broth and honey BBQ sauce, mixing well. Bring it to a gentle boil, ensuring that the rice absorbs the delicious flavors.
  4. Place the chicken back into the skillet and add the mixed vegetables. Cover and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Once everything is cooked, fluff the rice with a fork and garnish with sliced green onions or sesame seeds to enhance the presentation.
