Description

A cozy, heartwarming dish that features creamy sauces and tender chicken, perfect for any gathering.


Ingredients

  • 1 pound of chicken breasts
  • 12 ounces of pasta (your choice)
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of sun-dried tomatoes, chopped
  • 1 cup of spinach, chopped
  • 1 cup of grated parmesan cheese
  • 1 tablespoon of garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons of olive oil
  • Fresh basil for garnish (optional)


Instructions

  1. Cook the Pasta: Start by boiling water in a large pot. Add a pinch of salt and the pasta, cooking it according to package instructions until al dente. Drain and set it aside.
  2. Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side or until fully cooked through. Remove from the skillet and dice into bite-sized pieces.
  3. Make the Sauce: In the same skillet, add garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring it to a simmer. Add heavy cream and sun-dried tomatoes, allowing it to slowly thicken for about 5 minutes.
  4. Combine Everything: Stir in the parmesan cheese and spinach, letting them mix into the flavorful sauce. Add the cooked pasta and the diced chicken back into the skillet. Toss everything together, letting it simmer for a few more minutes.
  5. Serve: Garnish with fresh basil and extra parmesan if desired. Serve warm and enjoy this delightful dish that’s meant to impress!

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, microwave or warm it up in a skillet with a splash of chicken broth.
