Ingredients
- 2 chicken breasts, boneless and skinless
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach, fresh
- 1 cup parmesan cheese, grated
- 12 ounces pasta (penne or bowtie)
Instructions
- Prepare the chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides, about 6-7 minutes per side. Once cooked, remove the chicken and set it aside.
- Make the sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then, pour in the heavy cream and chicken broth, stirring well.
- Add flavor: Stir in the sun-dried tomatoes and spinach. Allow everything to simmer for about 5 minutes until the spinach wilts and the sauce thickens slightly. Add the parmesan cheese.
- Combine with pasta: Cook the pasta according to the package instructions. Drain and toss the pasta with the sauce in the skillet. Slice the chicken and nestle it on top of the pasta.
- Serve: Garnish with additional parmesan and fresh basil if desired.
Notes
For best flavor, avoid overcooking the chicken. Use al dente pasta for the best texture.
