Description
A comforting and easy meal prep option with juicy chicken and a sweet-tangy sauce that’s perfect for a busy week.
Ingredients
- 1.5 to 2 pounds chicken thighs or breasts
- Salt and pepper
- 1 tablespoon oil (olive oil or avocado oil)
- 3 tablespoons Dijon mustard
- 3 tablespoons maple syrup
- 1 tablespoon apple cider vinegar or lemon juice
- 1 to 2 cloves garlic, minced
- Optional: smoked paprika or dried thyme
- Your sides: rice, quinoa, roasted potatoes, sweet potatoes, or salad greens
- Your veggies: broccoli, green beans, Brussels sprouts, carrots, bell peppers, etc.
Instructions
- Heat your oven to 425°F if you are roasting veggies, and set a sheet pan out.
- Chop your veggies, toss with oil, salt, and pepper, and get them roasting first.
- Pat the chicken dry, then season both sides with salt and pepper.
- Stir together Dijon, maple syrup, vinegar or lemon, garlic, and any optional spices.
- Heat oil in a skillet over medium heat. Sear the chicken for a few minutes per side until it has color.
- Turn the heat down to medium-low. Pour in the sauce and let it simmer gently until the chicken is done and the sauce thickens slightly.
- Let the chicken rest for 5 minutes before slicing, and pack everything into containers.
Notes
Real maple syrup tastes best. Avoid pouring all sauce in too early to prevent burning.
