Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 packet of ranch dressing mix
- 1 cup chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup of sliced mushrooms (optional)
- Fresh parsley for garnish (optional)
Instructions
- Prepare the chicken by seasoning with salt and pepper. In a skillet, heat the olive oil over medium-high heat and sear for 3-4 minutes on each side.
- Combine ingredients in the slow cooker: mix the cream of chicken soup, ranch dressing mix, and chicken broth. Add sliced mushrooms if desired. Place seared chicken in the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken shreds easily.
- Serve the shredded chicken topped with gravy and garnish with fresh parsley. Enjoy with mashed potatoes or rice.
Notes
Do not overcrowd the slow cooker for even cooking. Check chicken doneness with a meat thermometer (165°F/75°C).
