Description

A comforting low-carb casserole that combines the flavors of a classic cheeseburger in a hearty dish, perfect for cozy family nights.


Ingredients

  • 1 lb ground beef
  • 6 strips of bacon, chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup cream cheese, softened
  • 4 large eggs
  • ½ cup heavy cream
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Salt and pepper to taste
  • 1 cup diced tomatoes (optional)
  • Green onions for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the chopped bacon in a skillet over medium heat until crispy. Remove and set aside.
  3. Brown the ground beef in the same skillet until fully cooked, then drain excess fat.
  4. Add garlic powder, onion powder, salt, and pepper to the beef.
  5. Mix cream cheese, heavy cream, and eggs in a large bowl until smooth. Stir in half of the cheddar and bacon.
  6. Assemble the casserole in a greased baking dish: layer cooked beef, cream cheese mixture, diced tomatoes, remaining cheese, and bacon.
  7. Bake for 30-35 minutes or until the top is golden and set.
  8. Garnish with green onions and serve warm.

Notes

Storing: This casserole can be refrigerated for up to three days or frozen before baking. Thaw overnight before baking.
