A comforting low-carb casserole that combines the flavors of a classic cheeseburger in a hearty dish, perfect for cozy family nights.
Ingredients
- 1 lb ground beef
- 6 strips of bacon, chopped
- 1 cup sharp cheddar cheese, shredded
- 1 cup cream cheese, softened
- 4 large eggs
- ½ cup heavy cream
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Salt and pepper to taste
- 1 cup diced tomatoes (optional)
- Green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the chopped bacon in a skillet over medium heat until crispy. Remove and set aside.
- Brown the ground beef in the same skillet until fully cooked, then drain excess fat.
- Add garlic powder, onion powder, salt, and pepper to the beef.
- Mix cream cheese, heavy cream, and eggs in a large bowl until smooth. Stir in half of the cheddar and bacon.
- Assemble the casserole in a greased baking dish: layer cooked beef, cream cheese mixture, diced tomatoes, remaining cheese, and bacon.
- Bake for 30-35 minutes or until the top is golden and set.
- Garnish with green onions and serve warm.
Notes
Storing: This casserole can be refrigerated for up to three days or frozen before baking. Thaw overnight before baking.
