Ingredients

  • 1 pound of boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 cup chopped cucumbers
  • 1 cup diced tomatoes
  • ½ cup red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • Fresh parsley for garnish


Instructions

  1. Combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a small bowl to make the marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them, ensuring they are well coated. Let marinate for at least 30 minutes.
  3. Preheat your grill or skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes on each side until cooked through.
