Ingredients
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup unsalted butter
- 1/2 cup fresh lemon juice (about 2 to 3 lemons)
- 1 cup chicken broth
- 1/4 cup capers, rinsed and drained
- Fresh parsley, chopped, for garnish
Instructions
- Prepare the chicken: Season the chicken breasts with salt and pepper on both sides. Dredge each piece in flour and shake off any excess.
- Sear the chicken: In a large skillet, heat olive oil and butter over medium heat. When the butter has melted and starts to foam, add the chicken breasts. Cook for about 5-7 minutes on each side, or until golden brown and cooked through.
- Make the sauce: Once the chicken is cooked, remove it from the skillet and set it aside on a plate. In the same skillet, add the chicken broth, lemon juice, and capers. Stir well, scraping up any brown bits from the pan.
- Return the chicken: Place the chicken back into the skillet and simmer in the sauce for about 2 minutes. This will allow the chicken to absorb those wonderful lemony flavors.
- Finish and serve: Garnish the dish with fresh parsley before serving. This Lemon Chicken Piccata pairs beautifully with pasta or a light salad.
Notes
For even cooking, pound the chicken breasts to an even thickness. Adding lemon zest enhances the citrus flavor.
