Ingredients
- 1 lb chicken breast, diced into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tsp cornstarch
- 2 tbsp vegetable oil
- 1 bell pepper, diced
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 1/2 cup unsalted peanuts
- 2 green onions, sliced
- 1 tbsp chili paste (adjust for spice level)
Instructions
- Marinate the chicken: In a bowl, combine the diced chicken with soy sauce, rice vinegar, and cornstarch. Let it marinate for at least 15 minutes.
- Heat the oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.
- Cook the chicken: Add the marinated chicken to the skillet and stir-fry until cooked through and golden brown, about 5-7 minutes.
