Description

A comforting and flavorful dish that embodies the essence of autumn, featuring chicken stir-fried with vibrant veggies, peanuts, and a spicy sauce.

Ingredients

  • 1 lb chicken breast, diced into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tsp cornstarch
  • 2 tbsp vegetable oil
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1/2 cup unsalted peanuts
  • 2 green onions, sliced
  • 1 tbsp chili paste (adjust for spice level)

Instructions

  1. Marinate the chicken: In a bowl, combine the diced chicken with soy sauce, rice vinegar, and cornstarch. Let it marinate for at least 15 minutes.
  2. Heat the oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.
  3. Cook the chicken: Add the marinated chicken to the skillet and stir-fry until cooked through and golden brown, about 5-7 minutes.
  4. Add the veggies: Toss in the diced bell pepper, minced garlic, and ginger. Stir-fry for another 2-3 minutes until the bell pepper is slightly soft.
  5. Finish with peanuts and sauce: Add the peanuts and chili paste to the pan. Stir to coat all ingredients evenly and cook for an additional minute.
  6. Serve and garnish: Garnish with sliced green onions. Serve over steamed rice or noodles.

Notes

Adjust the spice level and feel free to add more vegetables to boost nutrition.
