Ingredients
- 2 cups of mixed seasonal vegetables (such as bell peppers, zucchini, and broccoli)
- 1 pound of chicken breast, thinly sliced
- 2 tablespoons of olive oil (or coconut oil)
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 2 tablespoons of soy sauce (or tamari for a gluten-free option)
- 1 teaspoon of sesame oil
- Salt and pepper, to taste
- Optional toppings: sliced green onions and sesame seeds
Instructions
- Prepare your ingredients: Wash and slice your seasonal vegetables into bite-sized pieces. Cut the chicken breast into thin strips.
- Heat the oil: In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
- Cook the chicken: Add the sliced chicken to the skillet and cook for 5-6 minutes, stirring occasionally until cooked through.
