  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups spinach, fresh or frozen
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Prepare the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the pan. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
  2. Make the sauce: In the same skillet, add minced garlic and sauté for about 1 minute. Pour in the chicken broth and heavy cream, stirring to combine. Then, add the Italian seasoning and let it simmer for 2-3 minutes.
  3. Add the spinach and cheese: Lower the heat and add the spinach, allowing it to wilt. Stir in the grated parmesan cheese until melted and creamy, creating a rich sauce.
  4. Combine: Place the cooked chicken back into the skillet, spooning the creamy sauce over the top. Let it simmer for an additional 5 minutes to soak up the flavors.
