Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cups spinach, fresh or frozen
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Prepare the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the pan. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
- Make the sauce: In the same skillet, add minced garlic and sauté for about 1 minute. Pour in the chicken broth and heavy cream, stirring to combine. Then, add the Italian seasoning and let it simmer for 2-3 minutes.
- Add the spinach and cheese: Lower the heat and add the spinach, allowing it to wilt. Stir in the grated parmesan cheese until melted and creamy, creating a rich sauce.
- Combine: Place the cooked chicken back into the skillet, spooning the creamy sauce over the top. Let it simmer for an additional 5 minutes to soak up the flavors.
- Serve: Plate the chicken and drizzle extra sauce over it. Enjoy with a side of your favorite low-carb vegetables or over cauliflower rice for a complete meal.
