Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 16 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the chicken in a skillet with olive oil, seasoning with salt, pepper, and oregano, until golden brown.
  3. Sauté the mushrooms in the same skillet, then add garlic and cook until fragrant.
  4. Prepare the cream sauce by stirring in heavy cream, mozzarella, and Parmesan until melted.
  5. Combine everything by slicing chicken and arranging it in a baking dish; pour the sauce over.
  6. Bake for 25-30 minutes, until bubbly and golden.
  7. Garnish with parsley before serving.
