Ingredients
- 2 lbs chicken breast, cubed
- 8 oz mushrooms, sliced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the chicken by heating 2 tablespoons of olive oil over medium heat. Add the cubed chicken breast and season with salt and pepper. Cook for about 5-7 minutes until browned. Remove the chicken and set aside.
- Cook the onions and mushrooms in the same skillet for about 5 minutes until the onions are translucent and the mushrooms are tender.
- Add the minced garlic and Italian seasoning. Cook for an additional minute until fragrant.
- Combine everything by lowering the heat and pouring in the chicken broth and heavy cream. Stir well and let it simmer for a few minutes. Return the cooked chicken to the skillet and mix well.
- Top the mixture with shredded mozzarella cheese evenly on top.
- Bake the casserole in the oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Serve with fresh parsley garnish once cooled.
