Description
A comforting dish of chicken bites in garlic butter served with fresh lemon asparagus, perfect for a cozy meal.
Ingredients
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 tablespoons of unsalted butter
- 6 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
- 1 tablespoon of fresh parsley, chopped for garnish
- 1 bunch of fresh asparagus, trimmed
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Zest of 1 lemon
Instructions
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Toss in chicken pieces, paprika, thyme, salt, and pepper. Cook until chicken is browned and cooked through, about 8-10 minutes.
- Remove chicken from skillet and set aside.
- Add olive oil to the same skillet and increase the heat to medium-high.
- Sauté trimmed asparagus for 2-3 minutes until bright green and tender but still crisp.
- Drizzle with lemon juice and zest, and season with salt and pepper. Stir to combine and cook for an additional minute.
- Return cooked chicken to the skillet with asparagus and add remaining 2 tablespoons of butter. Stir until everything is coated and heated through.
- Garnish with chopped parsley and serve warm.
Notes
For best results, use fresh, organic ingredients. Adjust seasoning as needed.
