Description

Enjoy the warm and comforting flavors of this Keto Chicken Quesadilla, a perfect low-carb meal with delicious melted cheese and tender chicken.


Ingredients

  • Flourless low-carb tortillas, store-bought or homemade
  • 2 cups cooked chicken breast, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1/2 cup bell pepper, diced
  • 1/2 teaspoon garlic powder
  • 1 teaspoon taco seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for frying)
  • Optional toppings: sour cream, salsa, guacamole, or fresh cilantro


Instructions

  1. Combine the shredded chicken, cream cheese, cheddar cheese, diced bell pepper, garlic powder, taco seasoning, salt, and pepper in a bowl. Mix well until everything is evenly combined.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. Place a tortilla in the skillet. On one half of the tortilla, spread a generous scoop of the chicken filling. Fold the other half of the tortilla over to create a half-moon shape.
  4. Cook the quesadilla for about 3-5 minutes on one side or until it becomes crispy and golden. Carefully flip it over and add another tablespoon of olive oil to the pan. Cook for an additional 3-5 minutes until the other side is equally golden and the cheese is melted.
  5. Remove the quesadilla from the skillet and let it rest for a minute before slicing it into wedges. Serve with your favorite toppings.

Notes

Use a non-stick skillet for best results and don’t overstuff the quesadilla. Feel free to experiment with flavors by adding other vegetables.
