Description

A heartwarming fall favorite that marries the flavors of traditional chicken parmesan in a comforting casserole format, perfect for low-carb lifestyles.


Ingredients

  • 3 cups cooked chicken, shredded
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 eggs
  • ½ cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the shredded chicken, marinara sauce, garlic powder, Italian seasoning, salt, and pepper in a large bowl.
  3. Whisk the eggs and heavy cream together in another bowl until smooth.
  4. Layer half of the chicken mixture in a greased 9×13 inch baking dish, followed by half of the egg and cream mixture, then half of the mozzarella cheese. Repeat the layers with the remaining ingredients.
  5. Sprinkle the grated Parmesan cheese over the top.
  6. Bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
  7. Garnish with fresh basil before serving.

Notes

Cooking chicken ahead of time makes assembly easy. This casserole can be prepared in advance and refrigerated until ready to bake.
