Description

A heartwarming Keto Chicken Broccoli Casserole that combines tender chicken and vibrant broccoli in a creamy, cheesy sauce, perfect for cozy dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional for topping)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the broccoli by blanching it in boiling water for 2-3 minutes until bright green and just tender. Drain and set aside.
  3. Mix the softened cream cheese, heavy cream, garlic powder, onion powder, salt, and pepper in a large bowl until smooth and creamy.
  4. Combine the shredded chicken and blanched broccoli with the cheese mixture, folding everything gently until well coated.
  5. Transfer the mixture into a greased 9×13-inch baking dish, smoothing the top.
  6. Add the shredded cheddar cheese evenly over the top, and sprinkle with Parmesan cheese if desired.
  7. Bake in the oven for 25-30 minutes, until the cheese is melted and bubbly.
  8. Serve after letting it cool for a few minutes.

Notes

Use leftover rotisserie chicken for convenience. For a crisp topping, try crushed pork rinds or almond flour mixed with butter.
