Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 6 slices of bacon, cooked and crumbled
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1 cup ranch dressing (preferably low-carb)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of your slow cooker. Season with garlic powder, onion powder, paprika, salt, and pepper.
  2. Add vegetables: Layer the broccoli and cauliflower florets on top of the chicken.
  3. Mix ranch dressing: In a bowl, combine the ranch dressing with half of the shredded cheddar cheese, then pour it over the chicken and vegetables.
  4. Cook: Cover the slow cooker and cook on low for 360-420 minutes or on high for 180-240 minutes until the chicken is tender and fully cooked.
  5. Finish with bacon and cheese: About 15 minutes before serving, stir in the crumbled bacon and the remaining cheese, allowing it to melt.
  6. Serve: Once everything is cooked, serve warm with a sprinkle of freshly chopped parsley on top.
