Ingredients
- 2 lbs boneless, skinless chicken breasts
- 6 slices of bacon, cooked and crumbled
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup shredded cheddar cheese
- 1 cup ranch dressing (preferably low-carb)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the chicken: Place the chicken breasts at the bottom of your slow cooker. Season with garlic powder, onion powder, paprika, salt, and pepper.
- Add vegetables: Layer the broccoli and cauliflower florets on top of the chicken.
- Mix ranch dressing: In a bowl, combine the ranch dressing with half of the shredded cheddar cheese, then pour it over the chicken and vegetables.
- Cook: Cover the slow cooker and cook on low for 360-420 minutes or on high for 180-240 minutes until the chicken is tender and fully cooked.
- Finish with bacon and cheese: About 15 minutes before serving, stir in the crumbled bacon and the remaining cheese, allowing it to melt.
- Serve: Once everything is cooked, serve warm with a sprinkle of freshly chopped parsley on top.
