A savory and rich Keto BBQ Chicken Casserole perfect for the fall season, simple to prepare and a family favorite.
Ingredients
- 2 cups shredded cooked chicken (preferably grilled or rotisserie)
- 1 cup sugar-free BBQ sauce
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup chopped bell pepper (any color)
- 1/2 cup crumbled bacon (optional)
- 1 teaspoon garlic powder
- 1 teaspoon ground black pepper
- Salt to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, BBQ sauce, cream cheese, diced onion, chopped bell pepper, garlic powder, black pepper, and salt in a large mixing bowl.
- Fold in half of the shredded cheddar cheese and crumbled bacon (if using).
- Pour the chicken mixture into a greased 9×13 inch casserole dish and spread it out evenly.
- Sprinkle the remaining cheddar cheese over the top of the casserole.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
Notes
For best flavor, choose a high-quality sugar-free BBQ sauce. This casserole can be prepped ahead of time and stored in the fridge until ready to bake.
