Description

A deliciously comforting casserole featuring chicken, creamy cheeses, and marinara sauce, perfect for weeknight dinners.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups marinara sauce
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Optional: chopped fresh basil for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the chicken by seasoning with salt, pepper, and Italian seasoning. Cook in a skillet for about 5-7 minutes per side until fully cooked. Shred into bite-sized pieces.
  3. Mix the cottage cheese, half of the mozzarella, half of the Parmesan, and a pinch of salt and pepper in a large bowl.
  4. Layer marinara sauce at the bottom of a casserole dish, followed by half of the shredded chicken and half of the cheese mixture. Repeat the layers with remaining ingredients.
  5. Add the remaining mozzarella and Parmesan cheese on top.
  6. Bake covered with foil for 25 minutes, then remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  7. Garnish with fresh basil before serving.

Notes

Use leftover chicken for quicker preparation, and consider adding sautéed vegetables for added nutrition.
