A deliciously comforting casserole featuring chicken, creamy cheeses, and marinara sauce, perfect for weeknight dinners.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cups marinara sauce
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Optional: chopped fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the chicken by seasoning with salt, pepper, and Italian seasoning. Cook in a skillet for about 5-7 minutes per side until fully cooked. Shred into bite-sized pieces.
- Mix the cottage cheese, half of the mozzarella, half of the Parmesan, and a pinch of salt and pepper in a large bowl.
- Layer marinara sauce at the bottom of a casserole dish, followed by half of the shredded chicken and half of the cheese mixture. Repeat the layers with remaining ingredients.
- Add the remaining mozzarella and Parmesan cheese on top.
- Bake covered with foil for 25 minutes, then remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Garnish with fresh basil before serving.
Notes
Use leftover chicken for quicker preparation, and consider adding sautéed vegetables for added nutrition.
