Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup spinach, fresh and chopped
- 1 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1 cup breadcrumbs (use gluten-free if preferred)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the stuffing by combining spinach, cream cheese, mozzarella, Parmesan, garlic, salt, pepper, and Italian seasoning in a bowl.
- Prep each chicken breast by slicing a pocket into the side.
- Stuff each chicken breast pocket with the spinach and cheese mixture.
- Coat the stuffed chicken breasts in breadcrumbs.
- Sear the chicken in an oven-safe skillet with olive oil for 3-4 minutes on each side.
- Bake in the preheated oven for 30-35 minutes, or until cooked through.
- Serve garnished with fresh parsley.
