Description

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup cooked rice or quinoa
  • 2 tablespoons hot honey
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 cup corn, fresh or frozen
  • ½ cup black beans, rinsed and drained
  • 1 avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper, to taste


Instructions

  1. Prepare the chicken: Season the chicken thighs with salt and pepper. In a large skillet, heat olive oil over medium heat. Once hot, add the chicken and cook for about 6-7 minutes on each side, or until cooked through and golden. Remove from the skillet and let it rest for a few minutes.
  2. Make the hot honey sauce: In the same skillet, reduce the heat and add the hot honey. Allow it to warm through, then return the chicken to the skillet. Coat the chicken in the sauce, ensuring it’s evenly glazed.
