Ingredients
- 1 1/2 to 2 pounds boneless beef sirloin or ribeye, cut into 1-inch cubes
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon smoked paprika (optional)
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Prep the meat: Pat the beef cubes dry with paper towels, then season evenly with salt, pepper, and smoked paprika.
- Heat the pan: Place a heavy skillet over medium-high heat. Add olive oil and let it shimmer.
- Sear in batches: Add beef cubes in a single layer without crowding and sear for 2–3 minutes until a crust forms, then flip and brown the other side for another 1–2 minutes.
- Add butter and garlic: Lower heat to medium, push the meat to one side, add butter, then stir in garlic and thyme. Spoon melted garlic butter over the steak pieces for 30–60 seconds until fragrant.
- Finish and rest: Transfer steak bites to a serving platter, sprinkle with fresh parsley and a squeeze of lemon. Let them rest 3–5 minutes before serving.

For optimal tenderness, ensure steak cubes are uniform in size and allow to rest before serving.
