Ingredients
- 1 lb ground beef or shredded chicken
- 1 cup black beans, rinsed
- 1 cup shredded cheese (like cheddar or Monterey Jack)
- 1 cup salsa or diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1 package of large flour tortillas
- Cooking spray or olive oil
- Optional toppings: avocado, sour cream, lettuce, and diced tomatoes
Instructions
- Prepare the Filling: In a large mixing bowl, combine the ground beef or chicken, black beans, shredded cheese, salsa, cumin, and chili powder. Mix until well combined.
- Assemble the Chimichangas: Lay a large tortilla flat on the counter. Spoon about 1/2 cup of the filling into the center. Fold in the edges and roll it up tightly, ensuring the filling doesn’t escape. Repeat this process until all tortillas are filled.
- Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes for optimal crispiness.
- Air Fry the Chimichangas: Spray each chimichanga lightly with some cooking spray or brush them with olive oil. Place them seam-side down in the air fryer basket, leaving space between each one. Air fry for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.
- Serve: Once done, remove the chimichangas carefully and let them cool for a couple of minutes. Serve with your favorite toppings like avocado, sour cream, or fresh lettuce.
Notes
For extra crispiness, generously spray chimichangas with cooking oil before cooking. For a vegetarian option, substitute meat with roasted vegetables or quinoa.
