Ingredients

  • 1 lb ground beef or shredded chicken
  • 1 cup black beans, rinsed
  • 1 cup shredded cheese (like cheddar or Monterey Jack)
  • 1 cup salsa or diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 package of large flour tortillas
  • Cooking spray or olive oil
  • Optional toppings: avocado, sour cream, lettuce, and diced tomatoes


Instructions

  1. Prepare the Filling: In a large mixing bowl, combine the ground beef or chicken, black beans, shredded cheese, salsa, cumin, and chili powder. Mix until well combined.
  2. Assemble the Chimichangas: Lay a large tortilla flat on the counter. Spoon about 1/2 cup of the filling into the center. Fold in the edges and roll it up tightly, ensuring the filling doesn’t escape. Repeat this process until all tortillas are filled.
  3. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes for optimal crispiness.
